Double Chocolate Zucchini Bread

Ingredients: 

1⅔ C gluten free all purpose flour
⅓ C Dutch processed cocoa powder
1½ tsp xanthan gum
1½ tsp baking powder
½ tsp baking soda
½ tsp fine sea salt
⅔ C light brown sugar (or coconut palm sugar)
¼ C mini chocolate chips
2 eggs (or egg substitute)
1 tsp vanilla extract
¼ C milk of choice*
½ C canola oil
2 C zucchini, shredded**
