Butterfly the chicken breast, dust with flower, salt, pepper
Sear in oil until browned and no longer pink. Transfer to plate.
Add wine and onion off the heat. Cook on medium heat until reduced. Add dried fruit and allow to cook down. You could add preserves and then add tarragon and salt. Return chicken to pan and allow to cook adding things as needed.
