The Easiest Prime Rib Recipe Ever

Everyone needs a foolproof go-to recipe for that impromptu dinner party — after all, it is holiday season and that means you’re going to be hosting up a storm in no time. With only five ingredients and two simple steps, you’ll have a delicious prime rib ready to feed eight (and your sanity will be saved… you’re welcome.) Here’s how:

What You’ll Need:

One 8-lb prime rib roast (about 4 ribs), excess fat trimmed
2 tablespoons Dijon mustard
8-10 cloves of garlic, micro-planed
2 tablespoons black pepper, coarsely crushed
Salt, to coat
Serves 8

Step 1: At least one hour before cooking, remove the roast from the fridge. Preheat the oven to 450 degrees and place the oven rack in the center of the oven. Then, place the rib roast on the roasting pan (fat side up) and generously salt the entire roast, to coat.

Step 2: In a small bowl, mix together the Dijon mustard and garlic cloves. Next, cover the entire roast with the mustard mixture and then with crushed black pepper. Roast for 20 minutes and then reduce heat to 325 degrees.

For medium rare center, cook the roast for about 2 hours and 10 minutes (registering at 130-135 degrees in the center)

For a medium center, cook the roast for about 2 hours and 25 minutes (registering at 140-145 degrees in the center)

Tip: When using a meat thermometer do not position it near a bone.
