Made with cracked pepper, feta cheese and spinach, our Egg White Florentine is a delicious way to spice up breakfast.
Ingredients
olive oil cooking spray
1 medium garlic clove, thinly sliced
2 Tbsp finely diced mushroom
1 cherry tomato, finely chopped
2 Tbsp finely chopped baby spinach
1 pinch salt
Fresh cracked black pepper to taste
2 large egg whites
1 Tbsp feta cheese, crumbled

Heat olive oil cooking spray in an 8-inch nonstick skillet over medium heat.
Add garlic and mushrooms; cook, stirring, 1 minute.
Add tomato, spinach, salt and pepper; cook, stirring frequently, until spinach is wilted and bright green in color, about 20 to 30 seconds.
Reduce heat to low; add eggs, cover pan and cook until eggs are set, about 2 minutes.
Flip egg mixture with a large spatula; sprinkle with cheese, cover and cook until cheese melts, about 30 seconds.
Meanwhile, toast Thomas’® Bagel Thins™ bagel. Serve eggs sandwiched between bagel halves.
