Egg white Tortillas

Light version of our beloved mexican dish!

Ingredients: 

Half a can of red beans, 1 yellow peppers, 10 long beans, half an eggplant, 2 corn tortillas, half an avocado, guacamole spices, sun dried tomatoes spread, mustard with grains, 4 egg whites, shaved Parmiggiano Reggiano.


  1. Put some olive oil in a pan and season all the vegetables whit some paprika, curry and black pepper.
  2. Cook 4 scrambled egg whites.
  3. Warm up the tortilla in the oven.
  4. Prepare the guacamole mashing the avocado with the spices.
  5. Shave some cheese on the vegetables.
  6. Mix everything together!
