Canadian bacon
English muffins
1/2 cup butter
1 tbs water
1 tbs lemon juice
Pepper
Salt
3 egg yolks
Poach eggs for 4-6 min. Toast muffins. Place Canadian bacon and poached eggs atop toasted muffins. Top with hollandaise sauce.
Hollandaise sauce:
In microwave safe bowl combine butter, water, lemon juice, and a dash of pepper and salt. Cook on high 1-2 min until butter melts. Place 3 beaten egg yolks in butter mixture. Cook in microwave 30-40 sec until thick, stiring every 10 sec.
