4 thin slices prosciutto
3 Tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
6 packed cups baby spinach (6 oz)
1/4 tsp ground nutmeg
1/2 cup 1% milk
2/3 cup grated Pecorino Romano cheese
5 tsp salt, divided
1/2 tsp freshly ground black pepper
1 Tbsp fresh lemon juice
4 eggs, at room temperature
2 English muffins, halved crosswise
