Enchiladas With Chicken And Black Beans

Enchilada sauce

2 1/2 tablespoon olive oil
2 tablespoon plain flour
3/4 cup tomato paste
1/4 teaspoon chilli powder (or 1 tsp chopped chipotle pepper in adobo sauce)
1 teaspoon cumin
1 teaspoon dried oregano
2 cup chicken stock
1/2 teaspoon salt

Enchiladas with chicken and black beans

1 tablespoon oil
1 large red onion, chopped
2 clove garlic, crushed
1/2 red or green capsicum, chopped
1/4 teaspoon chilli powder
2 teaspoon cumin
1 teaspoon dried oregano
395 gram can of black beans, drained and rinsed
3 tablespoon fresh coriander, chopped
2 cooked chicken breasts, shredded (about 3 cups)
9 flour tortillas
1 1/2 cup grated cheese
