Ethiopian Lentil Salad (Azifa)

Very good flavors, but definitely do not overcook the lentils!

Ingredients: 

1 lb lentils
1 cup shallots ( chopped)
6 ounces canned green chilies, chopped
6 fresh chilies, thinly sliced
2 tablespoons fresh basil, chopped
1 teaspoon fresh parsley
4 teaspoons fresh lemon or 4 teaspoons lime juice
½ teaspoon salt
2 teaspoons wine vinegar
6 tablespoons olive oil
2 medium diced tomatoes, for garnish
