Fleur de Sel Caramels

Ingredients: 

1 cup heavy cream
1/2 teaspoon vanilla extract
5 tablespoons unsalted butter, cut into pieces
1/2 teaspoon fleur de sel, plus more for sprinkling on top
1 1/2 cups sugar
1/4 cup light corn syrup
1/4 cup water

You will also need parchment paper and candy thermometer.
