Floribbean Summer Fruit Salsa Salad

The sweetness of peaches and nectarines (which are oh so tasty this year) are combined with vegetables and herbs to produce an unusual and tasty salad with a kick. One of my students asked what a Floribbean was? I explained that the term stands for Florida (where I went to graduate school) and Caribbean. She was relieved; as she said that she was sure that she would not like this type of bean.

Ingredients: 

2 peaches, chopped
2 nectarines, chopped
1 avocado, chopped
½ c cucumber, peeled, seeded and chopped
½ c tomatoes, chopped
½ c red bell pepper, chopped
1 tsp grated ginger
2 tbsp orange juice
2 tbsp lime juice
¼ tsp salt
2 tbsp olive oil (optional)
¼ c cilantro, chopped
1 jalapeño, chopped
3 c mesclun


  1. Just before serving, combine the peaches, nectarines, avocado, cucumber, tomatoes and red pepper.
  2. In a separate bowl, blend the ginger, orange juice, lime juice, salt and olive oil.
  3. Sprinkle the cilantro and jalapeno over the mango-avocado mixture. Pour on the dressing and carefully combine.
  4. Divide the greens among 4 to 6 serving plates. Place some of the salsa on top of the greens. Serve immediately.
