Flourless Orange Almond Mini Cakes

Ingredients: 

1 orange
125g caster sugar
3 eggs
125g almond meal
1/2 tsp baking powder
Mascarpone for serving

=Syrup =
Juice 1 orange
1 tbsp caster sugar

= METHOD =
1. Place a whole orange (skin on) in a saucepan and cover with water. Bring to the boil, cover with a lid, and turn to simmer for 40 minutes. Drain orange and once cooled, chop into chunks. Blend into a puree with either a hand blender or food processor. Keep aside.

2. Preheat oven to 160C or 150C fan forced oven. Butter a muffin tin or individual ramekins.
3. Whip sugar and eggs until light and fluffy. Stir in the orange puree, almond meal and baking powder, gently folding together until well combined.
4. Pour batter evenly into tins and bake in the oven for 30 – 40 minutes.
5. For the syrup: Combine the orange juice and sugar in a pan, bring to boil then turn to simmer until slightly thickened. Cool, then drizzle over orange cakes.
