Fried Eggs with Shrimps

Ingredients: 

2 Eggs
8 Shrimps (deveined)
1 tbsp Spring onions (chopped)
2 tbsp Milk
2 cloves Garlic (minced)
2 tbsp Shaoxing wine
1 tbsp Cornflour
Dash of Salt
Dash of Sugar
Dash of Pepper
1 tbsp Cooking oil
1/2 tsp sesame oil


Directions

  1. Marinate the prawns overnight with cornflour, shaoxing wine, sugar, pepper and salt and keep chilled in the fridge.
  2. In a bowl, beat the eggs with milk.
  3. Add a dash of sugar, pepper and salt to the eggs mixture and continue beating.
  4. Heat cooking oil in wok and brown the garlic.
  5. Add in shrimps and fry till shrimps turn red, then add sesame oil.
  6. Carefully pour in the eggs mixture. Mix the eggs in a quick circular motion while frying.
  7. When eggs are half-cooked, add in the spring onions and continue frying till eggs are cooked.
  8. Remove eggs from wok and serve.
