German Chocolate Cheesecake

Ingredients: 

FOR THE TOPPING
4 egg yolks
12oz can evaporated milk
splash of vanilla
1 1/2 cups sugar
3/4 cup butter, cubed
one 14oz bag sweetened shredded coconut
heaping cup chopped pecans

FOR THE CRUST
1 box gluten free oreo cookies, crushed
4 tbps butter, melted

FOR THE FILLING
2 8oz pkgs of cream cheese, room temp
1 1/4 cups white sugar
2 eggs
2 tbsp cocoa powder
6 oz german chocolate, melted


Coconut Pecan Topping

  1.  In a large saucepan, combine the egg yolks, milk and vanilla and mix until well combined.
  2.  Add sugar and butter and cook on medium (not high!) heat for 12-15 minutes, until thickened to an almost pudding-like texture and is a golden brown.
  3.  Stir constantly!!!
  4.  Remove from heat and add coconut and pecans.
  5. Allow to cool completely.
