Gina's Date and nut balls

Ingredients: 

120g butter/margarine

1 cup chopped dates

2/3 cup sugar

2 eggs, beaten

1 cup chopped peanuts or slivered almonds

2 cups crisp rice cereal

1 cup dessicated coconut


1. In a saucepan, melt butter over low heat.

2. Stir in the dates, sugar and eggs. Cook and stir over low heat for 10 minutes

3. Remove from the heat; stir in the nuts, cereal. Leave to cool.

4. When cool enough to handle, shape into small balls; roll in coconut. Place on waxed paper-lined baking sheets. 

5. Refrigerate for 1hour or until firm. Store in an airtight container in the refrigerator.
