Ginger-Simple Syrup

Ingredients: 

12 ounce fresh ginger thinly sliced
1 ½ cup sugar


In a small saucepan bring ginger, sugar, and 1 ½ cup water to a boil over medium heat. Cook 2 minutes. Strain the mixture, discard ginger. Store in airtight container in refrigerator for 1 week.
