Goat Cheese Stuffed Chicken

Ingredients: 

4 oz chicken breast
1 oz goat cheese
1 t pesto
1 sliced sun-dried tomato in oil
1 artichoke heart, thinly sliced
2 T olive oil
leafy greens
1/3 C chickpeas, rinsed and drained
2 T balsamic vinaigrette


  1. Butterfly chicken and stuff with goat cheese, pesto, tomatoes and artichoke
  2. Saute in oil 3-4 min per side. Place on baking sheet and cook 10 min at 375
  3. Serve with salad sprinkled with chickpeas, vinaigrette
