4 EL Butter
250 g Risotto-Reis (z. B. Vialone Nano)
etwa 1 l heiße Gemüsebrühe
2 kleine Zwiebeln
2 süßsäuerliche Äpfel
frisch geriebene Muskatnuss
Salz
100 g Gorgonzola dolce
30 g frisch geriebener Parmesan (plus etwas mehr zum Servieren)
2 EL Calvados (wer mag)
