Grandma Nelson's Coffeecake

Ingredients: 

1-3/4c. Scalded Milk (heated almost to boiling)
1 pkg. Dry Yeast
½c. Sugar
½c. unsalted butter
2 Egg Yolks slightly beaten
4-5 Cardamom Seeds, ground/crushed or ½-1t. ground cardamom
4-5c. Flour
2t Salt
½c. salted butter
cinnamon/cardamon sugar for filling


 

  1. Heat Milk to almost boiling
  2. pour into mixing bowl and cool to lukewarm by adding sugar and butter
  3. add egg yolks
  4. In a separate bowl, whisk or sift together yeast, cardamom and 2c. flour
  5. Slowly add flour to milk mixture and mix on low-medium for 4 minutes
  6. Add salt to 2c. flour and add to mixture
  7. Turn mixture out onto board or counter and knead in 1 more cup of flour
  8. clean out mixing bowl and add a little oil into the bottom.  Add dough, turn over once, and cover with plastic wrap and a clean towel.  Put in a warm place to rise double (about an hour)
  9. After it has doubled, punch down and divide into 2 equal parts and refrigerate for 30min-hour (or overnight)
  10. Preheat Oven to 375 degrees
  11. Roll out dough into a rectangle and spread with softened butter, fold in half, roll out again and spread with butter, continue process as many times as you desire.  
  12. Finally roll out to a rectangle, spread with butter and sprinkle with cinnamon/cardamon sugar and raisins.  Roll up from long end, pinch together to form a ring.  With a sharp knife, score the top of the dough about ⅓ deep.  
  13. Grease cookie sheet and place dough seam side down.  Let rise for 30-45 min, then bake for 20-25min
  14. After cooling, drizzle with glaze.
