Greek Quinoa Salad

This makes a pretty good amount. I like to make a batch for dinner and keep the rest in the fridge for lunches. You could easily half it if you don't want as much.

Ingredients: 

Salad
1 1/3 cup quinoa, uncooked
2 2/3 cup water
pinch of salt
1 orange bell pepper, diced
1 cucumber, peeled, diced, and seeded
1/2 medium red onion, diced
1 cup cherry tomatoes, halved
1/2 cup sliced kalamata olives
6 oz. container feta cheese
Dressing
1/3 cup + 1 Tbsp. red wine vinegar
1/3 cup olive oil
1 tsp. oregano
4 Tbsp. lemon juice
1 Tbsp. honey
