Ingredients: 

1 cup quinoa uncooked
2 cups water or broth
1 pint cherry tomatoes diced
1/2 cup red pepper diced
1/2 cup green pepper diced
1 cup cucumber diced (about 1/2 long english cucumber)
1/2 cup black olives sliced
1/4 cup red onion diced
3 oz feta cheese
1/3 cup greek dressing or homemade below
1 tablespoon parsley chopped, fresh
