Green Tea Rolls

Notes: 

6 or 12 servings

Ingredients: 

= Pancakes =
~ the pan size is about 15 x 10 cm
120g all purpose flour
2 tsp Green tea powder
1 tbsp Brown sugar
2x eggs
300ml full cream milk
2 tbsp melted butter

= Fillings = (makes 2 rolls each)
(A) 175g Sweet potato (peeled)
1 tbsp Low fat milk
2 slices cheese

(B) 1/2 cups azuki beans
1/4 cup sugar
2 tbsp honey
water + milk
salt pinch

(C) 2x apples
3x eggs (hard-boiled)
salt pinch
pepper dash


= SWEET POTATO =

  • Steam thinly sliced sweet potatoes for about 20 minutes or till soft. Mash them while hot with a fork, add low fat milk and butter, mix well, set aside.
  • First sieve flour and green powder, fold in brown sugar, then slowly add egg and milk stir well, then add 1 tbsp melted butter, mix well. Pass through a sift and rest for 10 minutes.
  • Spread little butter on frying pan at medium small heat, pour in a ladle of batter and spread evenly, let the pancake stand for about 1 minute.
  • Place pancake on the rolling mat.
  • Top with cheese slices
  • Add mashed potato at one side of the pancake and roll up.
  • Seal the opening with a little butter.
  • Turn the opening downward and put in the fry pan, fry slightly.
  • Cut pancake roll into pieces with a sharp knife and dust some green tea powder on it before serve

= ANKO =

  • soak azuki overnight
  • rinse the beans
  • fill beans with water + milk (covers 1-inch above the beans)
  • boil until water started to evaporate
  • stir in sugar & honey
  • keep stirring until water + milk is absorb
  • sieve the beans to get smooth Koshi-an

= APPLE + EGG =

  • Blend apples in blender
  • simmer in pot & keep stirring until the juice evaporate
  • mash the boiled eggs & mix thouroughly with salt & pepper until getting a smooth texture
  • top apple on pancake, and then the egg
  • roll the pancake
