Ingredients: 

4–5 pounds bone-in skin-on chicken parts (see Recipe Notes)
1 large delicata squash, sliced in half lengthwise, deseeded & sliced into 1/2-inch half moons
1 large sweet potato, sliced into 1/2-inch wedges
1/4 cup olive oil
4 cloves garlic, finely chopped or grated
2 tablespoons brown sugar
2 teaspoons chili powder
1 teaspoon smoked paprika
kosher salt & ground black pepper, to season
for the apple cider brine:

4 cups apple cider
1/4 cup kosher salt
1/4 cup brown sugar
1 tablespoon whole peppercorns
1 tablespoon whole allspice berries
2 bay leaves
2 cinnamon sticks
12–15 whole cloves
for the apple cider glaze:

4 cups apple cider
2 tablespoons pure maple syrup
1 tablespoon apple cider vinegar
1/2 tablespoon Dijon mustard
2 cloves garlic, finely chopped or grated
2 sprigs fresh rosemary
