*I'm trying to cut back on the amount of sweetener I use and I typically omit the honey all together. Taste the sauce and add if you want it to be a bit sweet.
*Marinade the vegetables up to a day before.
For the halloumi
1 7 or 8 oz package halloumi,
½ tablespoon olive oil
¼ teaspoon black pepper
For the vegetables
1 small red onion
1 green or red pepper
1 to 1½ dozen cherry tomatoes
1 small zucchini
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
⅛ teaspoon sea salt, optional*
For the sauce
½ cup lightly packed cilantro
3 tablespoons tahini
1 tablespoon tamari
1 tablespoon lemon juice
⅛ teaspoon black pepper
2 teaspoons honey*
water, for thinning
For the topping
