Homemade Bounty Ice Cream

Here’s another easy-to-make recipe to celebrate summer. This time I made a delicious ice cream inspired by the famous Bounty bar. However, my ice cream is completely healthy and vegan.

Ingredients: 

Ingredients for the ice cream:

1 can of full fat coconut milk
3-4 tablespoons of chia seeds
½ cup of shredded coconut (or more if you want, as well as some shredded coconut to sprinkle your ice cream)
Sweetener of your choice
Vanilla extract

Ingredients for the chocolate part:

10-12 dates
1 cup of drinking water
2 tablespoons of cocoa powder or cacao powder


Put the milk in a bowl and add your sweetener and some vanilla extract. Add the chia seeds and the shredded coconut, and mix everything well. Transfer the mixture to a plastic container and let it sit for 15-20 minutes so the chia can start expanding. Then put it in the freezer. It’s ready in 3-4 hours.

Put your dates in a blender or food processor, add the water and the cocoa powder and blend them until you have your chocolate sauce. I usually keep the sauce in the fridge and put it over the ice cream right before serving.
