Honey Curry Sole Fillet Recipe

Notes: 

Don't know if my oven is shoddy or the sole was too thin but, with the exception of the edges, the fish was fall-apart soft after 20 minutes and had no consistency to it. Would not make again, sadly. The sauce, though a bit sweet, was tasty.

Ingredients: 

1/3 cup liquid honey
1/4 cup Dijon mustard
1 tablespoon curry powder
1/4 cup melted butter
4 thick fresh sole fillets
cilantro
roasted almonds

Not sure if the fillets were too thin or the oven wasn't hot enough but I cooked this almost 2x as long as the recipe called for and the sole was still barely cooked through, and disintegrated while trying to get it from the pan. I also found the sauce to be a bit sweet and overpowering for the fish. Won't be trying again.
