Ingredients: 

1 tablespoon olive oil
1/2 med onion, chopped
1/2 cup red pepper, chopped
1/2 cup green pepper, chopped
2 pounds black-eyed peas, soaked overnight and rinsed or frozen
4 cups vegetable broth
Bay leaf
2 teaspoon dry thyme leaves
Salt, black pepper, and cayenne to taste
1 bay Leaf
finely chopped green onion and chopped tomatoes as garnish
