Ingredients: 

1 Tbsp vegetable oil
¼ head cauliflower, cut into florets
½ (15-oz) can chickpeas, drained, rinsed
1 Tbsp curry powder
Kosher salt and ground black pepper
4 oz corn tortilla chips
6 oz Monterey Jack cheese, shredded
3/4 cup mango chutney or Major Grey's chutney
½ cup plain yogurt (not Greek)
¼ cup cilantro leaves
3 Tbsp chopped raw cashews
