IP "Rice" Pudding

Ingredients: 

1 tsp Knox Gelatin or Agar Agar with ¼ cup water

1 Vanilla Pudding mixed wth 6 oz water

2 Cups of cauliflower – I put mine through a food processor first to chop it into small rice size pieces, I then cook it in the microwave covered for 6 minutes, no need to add water or anything.
You can pulse in blender if you don't have a food processor. You can also cook it first then chop it up into small rice like pieces.

Splenda (1-2 pkts).

Vanilla (1 tsp)

Cinnamon to taste


Directions

  1. Mix gelatin with 1/4 C. water until dissolved and add pudding. Add cauliflower and flavorings - stir and adjust to taste.
  2. Refrigerate until set. Great for Lunch! Must be very cold for best results.
