Jackie's Quick Red Beans and Rice

Notes: 

This recipe utilizes andouille sausage, precooked beans, vegetable broth to make a quick,tasty red beans and rice. This is adapted from Simply Recipes Red Beans and Rice recipe.

Ingredients: 

oil or bacon grease
1-2 onions minced
4 cloves garlic
1 1/2 c celery diced
1 green pepper, diced
package of Andouille sausage
1 quart vegetable broth
6 cups cooked beans

Tabasco
thyme
bay leaves
paprika


  1. Saute onions, garlic, celery, green pepper and sausage in oil.
  2. Add broth, spices and 2 cups of beans.  Cook beans until very soft to thicken broth.
  3. Add the rest of the beans until heated through and vegetables are tender.  Add Tabasco to taste.
