Leek and Potato Soup

I simply love this recipe! The buttermilk makes it so savory.

Ingredients: 

3 tablespoons butter
3 leeks (white and pale green parts only, halved lengthwise, thinly sliced)
1 medium onion, chopped (optional)
1.5 - 2.0 lbs potatos, peeled and chopped
2 - 4 cups chicken stock or broth
1 - 2 cups of buttermilk
2 tablespoons chopped fresh chives or green onions.
Grated cheddar cheese, for garnish.
