1 tbsp olive oil
2 clove cloves garlic (minced)
1/2 red onion (thinly sliced)
3 cup sliced mushrooms
12 lb penne (dried plain, type of your choice)
1 1/2 cup vegetable stock (or chicken stock or vegetable broth or chicken broth)
2 tomatoes (diced)
1 tsp dried oregano
1/4-1/2 tsp red pepper flakes (taste)
1 tsp lemon zest
1 bunch spinach (fresh, leaves remove stems)
4 cup broccoli florets
1/2 tsp salt
1/4 tsp black pepper (taste)
1/4 cup freshly grated parmesan (cheese)
