6boneless, skinless chicken thighs, each 3 to 4 ounces
3medium zucchini, about 12 ounces total
Rice
1tablespoon extra-virgin olive oil
1cup finely chopped red onion
2teaspoons minced garlic
1/2cup finely chopped red bell pepper
1/2cup finely chopped yellow bell pepper
1cup long-grain white rice
2cups low-sodium chicken broth
1/2teaspoon kosher salt
2tablespoons finely chopped fresh Italian parsley leaves
