Lentil Curry

Ingredients: 

Lentils, 1 cup
White Rice, short grain, .5 cup
Safflower Oil, linoleic, 2 tbsp
Canned Tomatoes, 1 can
*Coriander seed, 1 tsp
Onions, raw, 1 cup, chopped
Garlic, 2 clove
Chickpeas (garbanzo beans), 2 cup

Curry powder, 1 tbsp


Directions

Cook coriander in oil till fragrent, add onions, cook till soft. Add lentils + 3 cup water. Bring to a boil and simmer for 10mins. Add everything else, cook until rice has absorbed all the water.
