Lentil Dahl

Notes: 

Serves 4

Ingredients: 

2 TB oil
1 large onion, finely chopped
3 garlic cloves, chopped
1 carrot, diced
2 tsp cumin seeds
2 tsp yellow mustard seeds
1 inch piece fresh ginger, grated
2 tsp ground turmeric
1 tsp chili powder
1 tsp garam masala
1 c split red lentils
1 2/3 c water
1 2/3 c coconut milk
5 tomatoes, chopped
Juice of 2 limes
Cilantro, chopped
Salt and pepper
1/4 c slivered almonds, toasted


  1. Saute onion 5 minutes. Add garlic, carrot, cumin, mustard seeds, ginger. Cook 5 minutes.
  2. Stir in ground turmeric, chili powder, garam masala. Cook 1 minute.
  3. Add lentils, water, coconut milk, tomatoes. Season.
  4. Bring to boil, reduce heat and simmer, covered, 45 minutes.
  5. Stir in lime juice and some cilantro. Cook 15 minutes.
  6. Sprinkle with cilantro and almonds.
