Livin' on the Vedge Recipe

Ingredients: 

2 cups vegetable broth
1 ½ cups uncooked whole-wheat couscous
Grated lemon zest of 1 lemon
1 large sweet potato, peeled and diced
1 large red bell pepper, seeded and chopped
1 large yellow bell pepper, seeded and chopped
1 medium red pepper, chopped
1 medium zucchini, chopped
1 large Portobello mushroom, chopped
1 cup canned chickpeas, drained and rinsed
1 tbsp olive oil
2 tsp minced garlic
1 tsp minced garlic
1 tsp dried rosemary
¼ tsp each salt and freshly ground black pepper
½ cup crumbled light feta cheese or 1/3 cup freshly grated Parmesan cheese
¼ cup chopped fresh basil leaves or fresh mint leaves.
