Slice 1 big unpeeled russet potato in 1/8 inch slices, rinse in water and pat dry. Spread out on tin foil and squirt with olive oil. Bake at 425 degrees for 20-25 minutes. Take out of oven and make them into pile still on tinfoil. Spread shredded cheese and bacon in 3 layers with potato slices. Bake at 425 degrees 5-10 minutes. Put dobs of sour cream on it and enjoy.
