Low -Carb chocolate muffin in a mug

Ingredients: 

Chocolate Muffin in a Mug

1 egg
1-1/2 tbsp. golden flax meal
1-1/2 tbsp. almond flour
1 tbsp. unsweetened cocoa powder (heaping)
1-2 tbsp sweetener of choice
1 tbsp Maple syrup
1/2 tsp. baking powder
1 tbsp. almond milk or water
1 tbsp. coconut oil/ or melted butter


 In a small bowl,

whisk egg really well,

add all of the other ingredients and mix thoroughly.

Pour into a mug and microwave for 1 minute ( depends on make of microwave, may take a little longer) on full power.

let stand then tip mug upside down, serve with greek yoghurt or butter or peanut butter or 1tbsp maple syrup mixed with cocoa powder and pour over
