Low Fat Meat Sauce Explosion

This is relatively quick and easy and capitalizes on pre-made classico sauce.. and no I'm not ashamed! Recommend serving with a hearty whole grain pasta such as penne or rotini. Nutrition is for recipe only does not include pasta. Freezes incredibly well.

Ingredients: 

1 tbsp Extra Virgin Olive Oil
1 Med Red Onion diced
1 Med White Onion diced
4 Cloves Garlic pressed/crushed/diced finely
1.3lbs of turkey
1 Large Red Bell Pepper, sliced into short 1.5" pieces
9 large baby bella mushrooms sliced med thickiness
32oz classico marinara (I like the roasted garlic pepper one)
4 Roma Tomatoes med-large seeds removed diced


Directions

  1. Dice the onions and start to saute with the garlic cloves in the olive oil in a large nonstick crock over a med high heat
  2. after about five minutes add the turkey and brown. You want to get it to the point where there's very little pink left and the onions are starting to clarify
  3. add the red pepper and keep cooking over med high for about 3 more minutes
  4. while you're cooking all this you can continue to prep the tomatoes and baby bellas
  5. add the Classico (or sauce of your choice any will work) to the pot. Also add the diced tomotoes and baby bellas.
  6. season to your taste. Some suggestions: oregano, toasted garlic, sage, parsley, black pepper
  7. cover the pot and reduce heat to the low end of med low; let it simmer for at least 30 minutes. the longer the better. 

Servings: about 6 equal portions of about a cup of sauce. 

Preparation Time: 30-45 minutes. Have a glass of whine while you prep and chatter with your spouse! Maybe you can stretch it to an hour.
