Mango Cream Cheese Pie

Ingredients: 

Crust:
2 C Sifted flour
1/2 C Powered sugar
1 1/2 sticks Butter

Second layer:
1/2 C Sugar
1 tsp Vanilla
1 8oz Cream cheese
1 8oz Cool whip

Top Layer:
2 envelope Enflavored gelatin
1 C Cold water
4 Tbsp Lemon juice
5 C Cubed mango (1/2 in cubes)
1 C Boiling water
1 C Sugar


Crust:

Mix flour and powdered sugar. Cut in butter. Press into 9x13 pan. Bake for 20-25 minutes at 350 degrees. Cool.

Second layer:

Cream the cheese and the sugar together. Add vanilla. Fold in cool whip. Spread over cooled crust and chill till firm.

Top Layer:

Sprinkle gelatin over cold water. Add boiling water, sugar, lemon. Mix well. Add mango to cooled gelatin. Chill till slightly firm. Pour over cream cheese layer and refrigerate. Cut into 2 inch squares.
