8 eggs
1/2 to 2 cups water
oil
cheese mixture:
Ricotta
mozarella
grated cheese
salt and pepper
parsley
Prepare skillet with oil
In a large bowl prepare cheese mixture. Set aside while you make pancakes.
Put together ingredients and if too thick add more water to batter. Make each pancake the size of your own palm. Set aside to cool in between pieces of wax paper.
When ready, fill each pancake with cheese mixture and place in a oven-safe baking pan which has already been prepared with a layer of red sauce. When the pan is filled, add a bit more red sauce and parmesean cheese on top.
Heat oven to 350 degrees. Bake until cheese is melted.
