Notes: 

the red pepper sauce is delicious. I made it w/ rotisserie chicken instead & that was super fast & yummy! I also added some cherry tomatoes.

Ingredients: 

1 pound boneless, skinless chicken breasts, trimmed
¼ teaspoon salt
¼ teaspoon ground pepper1 7-ounce jar roasted red peppers, rinsed¼ cup slivered almonds4 tablespoons extra-virgin olive oil, divided
1 small clove garlic, crushed
1 teaspoon paprika
½ teaspoon ground cumin
¼ teaspoon crushed red pepper (optional)
2 cups cooked quinoa¼ cup pitted Kalamata olives, chopped¼ cup finely chopped red onion
1 cup diced cucumber¼ cup crumbled feta cheese2 tablespoons finely chopped fresh parsle
