4 cups ripe tomatoes, cut in 1/2 inch chunks ( I use grape tomatoes cut in half)
1 large red or green pepper, cut in 1/2 inch chunks
3 T fresh cilantro, chopped (optional)
3 T fresh mint, chopped (optional)
1 cup crumbled feta cheese
1/2 cup kalamata olives, pitted
2 scallions, cut in 1/4 inch slices
3 T fresh lemon juice
3 T olive oil
1/2 t salt
1/4 t pepper
Chop vegetables and place in large bowl. Refrigerate until ready to serve. Chop any optional ingredients and sprinkle over vegetables. Mix the oil and vinegar? ( recipe doesn't say how much) salt and pepper and set aside. When ready to serve, toss salad with dressing.
