Mini Mexican Quiches

Notes: 

*These freeze perfectly. Just bake as directed, then cool and freeze until needed. When ready to serve, bake for 10-15 minutes at 350 degrees until heated through.

* I've made this as a full-size quiche (in a pie pan)

Ingredients: 

1/2 cup butter, softened
1 (3 ounce) package cream cheese, softened
1 cup flour
1 (15 ounce) can black beans, drained
1/2 red pepper, finely chopped
1 cup Monterey Jack cheese, shredded
1 (4 ounce) can chopped green chilies, drained
2 eggs
1/2 cup whipping cream
1/4 teaspoon salt
1/8 teaspoon pepper

Dipping Sauce:

1/2 cup sour cream
1 cup salsa verde
1/2 teaspoon garlic powder, optional
1/2 teaspoon cumin, optional
