Missy’s Granola

Makes about 8 cups

Ingredients: 

1/3 cup chopped walnuts
1/3 cup chopped pecans
1/3 cup slivered almonds
2/3 cup hazelnuts
½ cup sesame seeds
½ cup bran
3 cups old-fashioned oats
1 cup shredded sweetened coconut
2 teaspoons ground cinnamon
½ cup unsalted butter
½ cup honey
¼ cup lightly packed brown sugar
2 teaspoons pure vanilla extract
½ cup dried cherries
½ cup sliced dates
½ cup dried cranberries


Preheat the oven to 325 degrees. Line a sheet pan with parchment paper; set aside.

 

In a large bowl, combine the nuts, sesame seeds, bran, oats, coconut, and cinnamon; set aside. Melt the butter in a small saucepan over medium heat, add the honey, brown sugar, and vanilla extract, and mix well. Pour over the nut mixture and toss well. Spread the granola in the prepared pan and bake, stirring every 10 minutes until golden brown, about 30 minutes. Remove the pan from the oven place the dried fruit on top of the granola (this will soften the dried fruit), and let cool completely.

 

The granola will keep in an airtight container for up to 2 weeks.
