Mom's Homemade Potato Bread

Ingredients: 

1-2 medium potatoes, mashed or 2/3 cup potato flakes
3 cups warm water (3 1/3 cups when using flakes)
1/2 cup sugar
1 1/2 tablespoon yeast
1/2 cup butter
1 1/2 tablespoon salt
4 cups flour
Flour


  1. Combine water, sugar and yeast in a large mixing bowl.  Let sit until yeast becomes active. 
  2. Microwave potato on high for 4 minutes (two minutes on each side).  Skin and mash the potato and then add it to the mixing bowl.  (Or add flakes).  
  3. Add butter, salt and the 4 cups flour.  Mix well.  Count to about 25...it shouldn’t stick to the bowl.  If it does, add more flour 1/2 cup at a time till dough forms around hook and isn’t too sticky. 
  4. Let rise until double.  Punch down.  Let rise until double again. 
  5. Divide into loaves and put into bread pans greased with light shortening or cooking spray. 
  6. Let rise until double. 
  7. Cook at 325° for 40 minutes or until crust is golden brown (even where bread touches the pan).
