Moroccan Chicken with Apricots

Ingredients: 

3-4 chicken breasts
1 medium onion chopped
2 tbsp olive oil
2 cloves garlic minced
pinch of sal
1/4 tsp tumeric (my mom changed this to garam masala)
1/4 tsp black pepper
1 tsp cinnamon or 1/2 cinnamon stick
3/4 cup dried apricots cut in half and raisins (can add less if don't like these)
1 tbsp peanut butter
1 tsp toasted sesame seeds and 1 tbsp almond slices (optional)


  1. Wash and pat dry the chicken, tehn rub with salt. In frying pan add 1 tbsp olive oil and sear chicken on both sides until brown. Remove from pan and place in glass or pyrex square dish.
  2. Add 1 tbsp oil and fry the onions until soft with garlic and other spices
  3. Top chicken with onion mixture 
  4. Dissolve peanut butter in 1/2 cup of water then pour over chicken. Add more water as needed so that the chicken is sitting in liquid.
  5. Add apricots and place in oven for 20-25 minutes
  6. Once cooked, serve and top with sesame seeds and almonds
