Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 3 cups cake flour
  • 1 cup milk (1/2 regular milk, ½ coconut milk)
  • ¼ teaspoon salt
  • 6 egg whites (beaten)
  • 3 teaspoons baking powder
  • ½ tablespoon almond extract
  • Fresh grated coconut to sprinkle on the cake, and between cake layers*

For the ICING: 

  • 1 ½ cups sugar
  • 7 tablespoons hot water
  • 1 teaspoon vanilla
  • 2 egg whites
  • 1 tablespoon white Karo syrup
  • pinch of salt

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
