Ingredients: 

¼ cup Applesauce
4 large eggs
⅓ cup lemon juice + the zest of 2 lemons
½ cup granulated sugar
¼ cup cornstarch

CRUST
2 tbsp Applesauce
½ cup coconut flour
¼ cup almond flour
2 tbsp granulated sugar
¼ teaspoon kosher salt
¼ cup finely shredded toasted coconut
¼ teaspoon poppy seeds
Zest of 1 lemon
2 tablespoons (¼ stick) unsalted butter, melted
1 large egg yolk

TOPPING
Powdered sugar
Poppy seeds
