Mozzarella Sticks

Ingredients: 

2 tablespoons arrowroot
2 eggs
1/4 cup golden flaxseed meal
1/4 cup grated Parmesan or Romano cheese
1/2 teaspoon dried basil, crushed
12 sticks string cheese, unwrapped
6 tablespoons coconut oil


  1. In a shallow bowl or plate, place the arrowroot.  In a shallow bowl, beat the eggs until blended.  In another shallow bowl or on a plate, combine the flaxseed meal, Parmesan or Romano and basil.
  2. Roll 1 string cheese stick in the arrowroot until coated.  Dip into the eggs and reroll in the arrowroot.  Dip into the eggs again and roll in the flaxseed mixture, turning to coat well (Be sure to coat the ends well).  Place on a baking sheet.  Repeat with the remaining cheese sticks.  Cover and place in the freezer for 30 mins.
  3. In a large skillet over medium-high heat, heat 1/2 inch of coconut oil.  Cook 3 to 6 cheese sticks in the oil for 1 min, turning once or until golden brown.  Repeat with the remaining cheese sticks.
  4. Serve with marinara sauce
